Had the litterer merely taken this Diet Pepsi can to any store selling soda, they'd have gotten a dime deposit returned and I wouldn't have gotten this photo. I left it there; You can't get a dime for flattened cans. Justin and Elise posted a photo:This is the only recipe that came out good on the first try! I've tweaked the recipe the tiniest bit more and I suspect it will be even better. This is my first time using blue corn and I'm slightly disappointed that it didn't make the dough very blue at all. They are golden with blue flecks and blue blobs (the berries). This recipe makes 12 muffins.1 cup blue cornmeal1 cup whole wheat flour for pastry1 1/2 cups fresh blueberries1/4-1/2 cup agave nectar depending on how sweet you like your muffins1 tbsp. baking powder1/8 tsp. salt (I used just a pinch and then realized it needed more)2 eggs1 cup buttermilk1 tsp. vanilla1/4 cup apple sauce2 tbsp. canola oilzest and juice of one lemon (I used a meyer lemon and it was very tasty)bake at 375 degrees for 20-25 min. These muffins are nice and summery! Please let me know if you make these and what you think. I'm open to suggestions too.
