Open Question: Baking wild alaskan salmon with skin on?

Saturday, August 16th, 2008

I have baked salmon a lot, but lately all I can find is salmon with the skin on. All the grocery stores around here only carry farm raised and I am so tired of it. Anyway, I bought some frozen wild alaskan salmon, but it has the skin on.

I’ve always cooked my salmon on a baking sheet seasoning it with olive oil, salt, pepper, and parmesan cheese. If the skin is on I cook it skin side down with the same seasonings. A separate tray for broccoli and cauliflower which I season the same way I do the salmon. I would like to bake this differently, maybe even with butter. I’m not looking for healthy tonight, I’m looking for the most flavor. Can I cut the skin off before I bake it, or is it best to just bake it and then peel the skin off? I hate the darker part of salmon that is just under the skin, I find it to taste nasty. I would like to take that completely off, but it’s so hard to do after it’s cooked, hot, and flaky. Also, I moved out of my parents house and am short on baking sheets. Can I just wrap this up in foil with certain ingredients without needing a baking sheet. I’m open to new suggestions. Please share your ideas or best recipes with me.
Thank you everyone. Sorry for the long description.

Open Question: College Life Recipes: Easy, fast, affordable. Need suggestions.?

Saturday, August 16th, 2008

I’m in college, and, of course, that means I pretty much have no money to work with unless it’s going to tuition, books and supplies. *laughs* I’m wondering if people have any ideas for recipes that are easy, fast and affordable, but still tasteful and healthy.

I’m on a budget, but one cannot live off of ramen, mac & cheese, and PB/J sandwiches. Though those three are tasty foods, I want something a bit more substantial that still works under a budget and that isn’t going to clog my arteries. :)

It doesn’t help that food prices are on the rise. *deep sigh* I will also look at any links to reliable websites with recipes for the college budget.
