i need something simple. It doesnt have to be healthy. And dont tell me to eat a sandwich or chips or granola bars or something. I’m sick of foods like that. Can I have a recipe with everyday foods like eggs, or strawberries, or milk or something like that.It cant really be panckaes or muffins. I don’t have the ingrediants for them. Including flour. I just need a new, simple recipe with everyday, simple foods.

Open Question: are my quesadillas healthy or is my friend right?

The other day a friend from my mommy and me group brought her 15 month old son over to play with my 18 month old daughter. We were discussing our busy schedules when I told her this recipe I had come up with.

I make my own flour tortillas at home from scratch when my daughter is napping, and it only takes 30 minutes to make a batch of 18 from prep to cook. I measure my ingredients carefully and am sure that my 8in shells are 80 calories a piece.

Then once or twice a week we have quesadilla night. I buy Kraft low fat cheddar cheese which is 80 calories per serving, I also buy low fat sour cream which is 80 calories for 2 tablespoons which is the average amount that I use anyways. Then I grill boneless skinless chicken breasts and take out my flour tortillas, brush them with olive oil, and make quesadillas in a skillet with a proper serving of shredded cheese and diced chicken.

My friend insists quesadillas are bad for you and high in fat, but I buy the best low fat ingredients I can, and am positive that my version is not. I serve celery and carrots to my daughter and grilled pineaple with low fat yogurt with the quesadillas, and I feel this is a well balanced meal. My quesadillas are not like taco bells, I don’t think she gets that.

Well anyways she won’t shut up about it. How can I get her to understand I make healthier versions of regular foods? I’m a good conscious mother and I feel like she has no right to pick on me like that.
The ONLY other thing that is used in my quesadillas is fresh onion (slightly sauteed in olive oil) and sometimes I serve low sodium salsa on the side. So it’s just cheese and chicken for my daughters quesadillas and cheese, chicken, and onion in me and my hubbys.
